Matcha & Coconut Bliss Balls

Matcha tea is one my favourite food staples at the moment. It has many health benefits ranging from boosting the immune system, calming the mind, relaxing the body, increased energy and concentration. I can see why the Japanese love Matcha and why they add it to almost everything. I for one am always adding it into my smoothies and am always trying to think of new ways to add it into my snacks or meals.

Here is my latest creation, please do not be alarmed by the colour like my husband was! I assure you it tastes amazingly better than how it looks!

Ingredients

1 tsp Matcha powder
1 Tbsp Cacao nibs
1 Tbsp of Coconut oil
1 Cup of Shredded coconut
1 Cup of Walnuts
10 Medjool date’s

 

Add walnuts and shredded coconut into a blender, blend until you get a crumbly texture. Remove pips from medjool dates, then add them into the blender with matcha powder. Blend until mixture is blended. Add coconut oil and blend until mixed, then added in cacao nibs and blend for a couple of seconds. Roll into small balls. Store balls in the fridge, they will be ready to eat within 30 minutes, or you can eat them straight from the blender! Enjoy!

Pineapple & Ginger Smoothie

This delicious pineapple and  ginger smoothie is a great morning starter, that will help jump start your day. The health benefits of ginger will help with any aches and pains and getting that digestive system working. Enjoy this refresher, but watch out for that ginger kick!

 

Ingredients

2 cm piece of Ginger
2 Cups of Coconut water
1 Tbsp Flax-seed meal
2 Cups of Pineapple
1 Banana
2  Celery sticks

Garnish with a slice of pineapple and a celery stick. 

 

Chop pineapple, banana and celery into small pieces.  Remove skin from ginger and add into a blender with the rest of the ingredients. Blend ingredients until smooth. Pour smoothie into glasses.  Garnish with a slice of pineapple slicing the middle and sliding it onto the glass, add a celery stick into the drink. Enjoy!

Mint & Blueberry Smoothie

A refreshing cooler for those days where you simply need to be refreshed!

Ingredients

1 Cup of Frozen Blueberries
1 Banana
1/2 Cup of Mint leaves
1 Cup of Coconut water

Optional
Coconut Chips

Peel and cut banana into small pieces. Add all of the ingredients into a blender and blend until smooth. Pour smoothie into a glass, garnish smoothie with a handful of coconut chips & a few mint leaves. Enjoy!

Serves 1 , time required 5 minutes.

Who loves a delicious cold pressed juice? I know I do!!!

I was lucky enough to try out Schkinny Maninny’s “Fruit and Veg” juice cleanse. Although I’m not a huge juicer nor do I get into juice detoxes and cleanses, I am a huge fan of getting my daily dose of fruit and veg! Plus I can never say no to a cold press juice, especially because you know its straight up nutritious goodness!

It can be hard to fit in your daily dose of fruit and vegetables, sometimes opting for a easier option like juices or smoothies would help you get your daily intake of nutritious foods. Juicing allows you to source a good variety of fruits and vegetables into your diet. Other benefits of juicing is that it helps the digestive process and boosts energy levels.

Now lets get down to the important stuff. My juices were delivered to my door step. I sampled the juices as I pleased, usually I would enjoy them after lunch or after I got home from work. Perfect for the humid weather that we have been experiencing.

The juices tasted good and were refreshing and energising. I think just knowing your drinking goodness makes you feel amazing as well!

For those of you that get a bit weary when it comes to drinking your vegetables, no need to be put off. You will see vegetables in a new light if you decide to give juicing a go, I promise you will not regret it!

The flavours I got to sample were;

Leap Frog – Apple, Cucumber, Kiwi, Parsley, Spinach

Pine Grapple – Pineapple, Apple, Celery, Carrot, Ginger

Beet Froot Tingle – Beetroot, Carrot, Apple, Ginger

Pink Sherbert – Watermelon, Lemon, Cucumber, Apple

Matcha tea is a great energy booster, which is good for people like myself that have Chronic fatigue. I recently purchased some Matcha tea and have been stuck with ideas on adding it into my diet. I’ve tried Matcha lattes, teas and smoothies, but I wanted to get creative and find other ways to add it into my diet. I’m always mooning over instagram, looking at all the inspiration on there. I came across some matcha bliss balls creations and after seeing a number of creations I just had to get into the kitchen and create some of my own. When it comes to creating bliss balls, it’s all about using what you have in your cupboards. Keep testing and trying the mixture out until your happy. I’m in love with this creation, cacao powder is one of my favourite ingredients to use. Combine it in with Matcha tea and it is heaven! I hope you enjoy this creation as much as I do!

Ingredients

1/2 Cup cashews
10 Medjool dates
1/4 Cup Cacao powder
1 Tbsp Matcha
1 Tbsp Coconut oil
1 tsp Maple syrup
1 tsp Vanilla extract

Remove pips from dates and combine into a blender with cashews, cacao powder and matcha powder. Blend until mixed, then add maple syrup, vanilla extract and coconut oil. Blend until mixture is all mixed, then roll into small balls. Store balls in the fridge, they will be ready to eat within 30 minutes or you can eat them straight from the blender! Enjoy!

Optional: For an extra Matcha hit, roll balls in extra Matcha powder.

Makes 12- 14, time required 10 minutes.


Tuna & Sweet Potato Salad

A delicious and easy meal for two or would make a great side dish.

Ingredients

1 Cup of Roasted Sweet Potato
½ Cup of Brown Rice
2 Tins 95g of Tuna in olive oil
½ Cup of Chopped Cucumber
1 Handful of Spinach
1 Handful of Rocket
1 Tbsp of Lemon juice
1 Tbsp of Coconut oil
½ Avocado
Cracked pepper

Set oven at 200 degrees Celsius. Line a tray with baking paper. Cut sweet potato into small pieces and place onto the tray with baking paper. Cover with coconut oil and cracked pepper. Bake for 30 minutes or until cooked. In a saucepan boil water and add brown rice, boil until cooked. Wash rocket and spinach leaves and add into a serving bowl. Also add into the serving bowl chopped avocado, cucumber and tuna. Once sweet potato and brown rice are cooked add into the serving bowl. Add lemon juice to the bowl and mix all of the ingredients with a wooden spoon. Once ingredients are mixed in meal is ready to serve, add extra cracked pepper if needed. Enjoy!

Berry Persimmon Smoothie

I’ve never really eaten persimmons, so I thought I would be adventurous and introduce one into a smoothie! I definitely love the flavours in this smoothie, it’s creamy and delicious.

Ingredients

1 Persimmon
1 Banana
½ Cup of frozen Strawberries
½ Cup of frozen Blueberries
2 Scoops of Amazonia raw protein (pea protein)
1½ Cup of Coconut milk
1 tsp of Coconut nectar

Garnish with coconut chips and a frozen strawberry.

Peel and chop banana and persimmon into small pieces. Combine persimmon and banana into the blender with the rest of the ingredients. Blend until smooth, pour smoothie into glasses. Garnish by sprinkling coconut chips on top of smoothie and place a frozen strawberry on top. Enjoy!
