Cinnamon Apples with Chia Pudding

IMG_20150515_101621

Now that the weather is getting cooler, our bodies crave warm food to nourish ourselves with. Although a chia pudding isn’t exactly warm, a topping of cooked cinnamon apples will do a fine job!

Ingredients

Chia Pudding
2 Tbsp of Chia Seeds
½ Cup of Coconut Milk
1 tsp of Rice Malt Syrup

Cinnamon Apples
1 Tbsp of Coconut Oil
1 Green Apple
Cinnamon
Garnish with a Cinnamon stick.

There are two parts to this recipe. The first part is the Chia pudding which needs to be prepared and left overnight or at least 4 hours before hand to set.

In a bowl or glass, pour chia seeds, rice malt syrup and coconut milk. Stir until it is mixed well, then leave in the fridge overnight or for at least 4 hours.

After the chia seeds have set, slice a green apple into small wedge pieces. In a fry-pan heat coconut oil at a medium heat. Add apple pieces and sprinkle cinnamon over apples. Fry for 5 minutes or until apples are soft. Once the apples pieces are cooked add to the chia pudding. Garnish with a cinnamon stick, Enjoy!

Serves 1, Prep time 10 minutes + set time for chia pudding.
