Matcha & Lemon Bliss Balls.

 

Oh Matcha it’s been awhile!

The lovely people at Zen green tea contacted me recently and sent a pack of matcha my way.  I was pretty stoked to receive some matcha, as I am a huge fan and it is usually found in my pantry. But since I have been pregnant, I haven’t had matcha because it contains caffeine.  However a small amount of caffeine during pregnancy is ok and I liked the fact that matcha had found it’s way to me!

A few things about Matcha, it’s full of lots of great goodies that would really benefit me at the moment. It helps boost your immune system, boosts your energy, calms the mind and helps with concentration! Definitely something I need at the moment while I’m working on my assignments! Matcha is full of lots of antioxidants, vitamins and minerals and tastes so good if you find the right combo for it!

I decided to hit up the kitchen and get creative, the result is this delish lemon and matcha bliss ball recipe. I hope you like them as much as I do!

Ingredients

1/2 Cup of Shredded coconut
1/2 Cup of Cashews
1 Tbsp of Lemon juice (approx 1 lemon)
1 tsp of Matcha
10 Medjool date’s

 

Remove pips from medjool dates and add into a food processor, add in all of the ingredients. Blend until mixture is mixed thoroughly. Should take around a minute, place on high. Roll into small balls and store balls in the fridge. They will be ready to eat within 30 minutes, or you can eat them straight from the blender! Enjoy!

 

Makes 10, time required 10 minutes.
