I got creative in the kitchen over the weekend and came up with these delicious mint and cacao balls. The mint isn’t too over powering in this recipe, which leaves you with a fresh subtle taste.

Ingredients

1 Cup Walnuts
1 Cup Cashews
1 Cup of Shredded coconut
2 Tbsp Cacao powder
1 Tbsp Coconut oil
10 Medjool dates
6 Large Mint leaves

Remove pips from dates and combine into a blender with all of the ingredients. Blend until mixture is all mixed. Once ingredients is blended, roll into small balls. Store balls in the fridge, they will be ready to eat within 30 minutes, or you can eat them straight from the blender! Enjoy!

Optional: For an extra mint hit, add in extra mint leaves.


Makes 18 – 20, time required 10 minutes.

  1. Oooh, I’m good with these. I have made something similar with dates (that my kid’s even ate) but without the nuts. I am very interested in trying it with the nuts.
