Tuna & Sweet Potato Salad

A delicious and easy meal for two or would make a great side dish.

Ingredients

1 Cup of Roasted Sweet Potato
½ Cup of Brown Rice
2 Tins 95g of Tuna in olive oil
½ Cup of Chopped Cucumber
1 Handful of Spinach
1 Handful of Rocket
1 Tbsp of Lemon juice
1 Tbsp of Coconut oil
½ Avocado
Cracked pepper

Set oven at 200 degrees Celsius. Line a tray with baking paper. Cut sweet potato into small pieces and place onto the tray with baking paper. Cover with coconut oil and cracked pepper. Bake for 30 minutes or until cooked. In a saucepan boil water and add brown rice, boil until cooked. Wash rocket and spinach leaves and add into a serving bowl. Also add into the serving bowl chopped avocado, cucumber and tuna. Once sweet potato and brown rice are cooked add into the serving bowl. Add lemon juice to the bowl and mix all of the ingredients with a wooden spoon. Once ingredients are mixed in meal is ready to serve, add extra cracked pepper if needed. Enjoy!

Serves 2, time required 40 minutes.
