Bacon Zoodles

Who hasn’t tried Zoodles aka Zucchini noodles? Oh my yum… they are amazing! Honestly you will be cheating on pasta if you try them, they are that delicious. But hey, they are healthy so I don’t see a problem!

Ingredients

1 Zucchini
1/2 of an Avocado
2 Pieces of Bacon
5 Cherry Tomatoes
1 Tbsp of Coconut Oil
1 tsp of Chia seeds
1/2 a Lemon
Cracked pepper

Slice zucchini with your vegetable Spiralizer (I use a Veggetti). Cut bacon into small pieces, cook with coconut oil for 2 minutes. Add your zoodles to the the fry pan and cook for around 5 -7 minutes. Chop cherry tomatoes in half and add them into the fry pan, cook for a further 2 minutes or until everything is slightly browned. In a bowl add avocado, squeeze the juice of half a lemon, add chia seeds, season with pepper and mash together with a fork. Add in the ingredients from the fry pan, stir until it’s all mixed in. Enjoy!

Serves 1, time required 15 minutes.
