Strawberry Overnight Chia Seeds

Delicious overnight chia seeds. A great way to start the day or it goes well as a sweet snack.

Ingredients

2 Tbsp Chia Seeds
1 tsp Coconut Nectar
1/2 Cup of Coconut Milk
3-4 Strawberries

Garnish
1 Strawberry

Add chia seeds, coconut milk and coconut nectar into a cup. Stir mixture gently then place in the fridge and leave over night. Chia seeds will expand and set during the night. When ready to eat, cut strawberries into quarters. Add them to a bowl and mash strawberries up with a folk. Once you are happy with the consistency, stir the strawberries in with chia seeds. Garnish with a strawberry, enjoy.

Serves 1, time required 10 minutes.

Hi, I'm Lennae and welcome to my world! I started this blog back in 2013 when I became unwell with ME/CFS (Myalgic Encephalomyelitis/ Chronic Fatigue Syndrome). I have since recovered from the illness and found I was back to full health by 2017. I started this blog to document my health journey along the way. . Since I have recovered from ME/CFS, I have enjoyed sharing the other chapters in my life including becoming a Mama, studying and the relocation back to my homeland NZ. As well as travel adventures, recipes and other positive influences along the way. I hope you enjoy my part of the world. Please don't be shy and drop me a line, I would love to hear from you! 1. What a great idea. I’m interested in no-blend smoothies that don’t take too much prep so this one sounds interesting for me.
Never tried Chia seeds. Thanks for posting this! Spoonie hugs.
