Zucchini Fettuccine

Zucchini fettuccine is a quick, tasty and easy dish! I love all the flavours combined in this meal.

Ingredients

25 grams of Goats Feta Cheese
1/2 Cup of Green Capsicum
2 Bacon Rashers
1 Small Zucchini
1 Tbsp of Sesame Seeds
1 Tbsp Coconut Oil

Chop green capsicum and bacon into small pieces. In a fry pan add coconut oil and bacon, cook for 2 minutes. Remove ends and peel the entire Zucchini lengthways with a peeler. Add Zucchini and capsicum into the pan and cook for 5 minutes or until cooked. Once the dish is cooked serve in a bowl. Slice feta into small pieces. Sprinkle feta and sesame seeds on top of zucchini fettuccine and mix with a fork. Enjoy!


Serves 1, time required 15 minutes.

  1. I’ve never been a huge zucchini eater but I’ve been reading a lot of recipes with it as a key ingredient. I think I’ll have to give this one a go! I’m such a carbs gal but with summer around the corner, this sounds like a great alternative!
