Rocket Walnut Salad

I whipped this really easy salad up for lunch today. It can be enjoyed on it’s own or would make a great side dish.

Ingredients

2 Slices of Feta
2 Handfuls of Rocket Salad
1/4 of a Red Capsicum
1 Cup of Walnuts
Olive Oil

Place rocket onto a plate. Chop capsicum and walnuts into small pieces, sprinkle them on top of the rocket. Chop feta into small bits and sprinkle over top of the salad. Drizzle olive oil over salad. Enjoy!


Serves 1, time required 10 minutes.
