I was feeling a bit adventurous, it was time to try pumpkin in a smoothie! The thought of pumpkin in a smoothie………….hmmmmm, well I tried it and absolutely loved it! Sweet pumpkin pie, it almost tastes like a custard square. I highly recommend trying, go on be adventurous!
1/2 Cup of cold Roasted Pumpkin
1 Banana (peeled and roughly chopped)
1 Cup of Almond Milk
6 drops of Stevia
1 tsp of Chia Seeds
1/2 tsp of Vanilla extract
4 Ice Cubes
1 Tbsp of Coconut Oil (for roasting pumpkin)
Sprinkle with a pinch of chia seeds
Combine all ingredients into a blender. Blend until smooth. Pour into glasses. Garnish with Chia seeds, enjoy!
Serves 2, time required 10 minutes.
If roasting pumpkin cut and cube then place into a oven tray. Pour coconut oil into the tray. Bake at 200 degrees for 30-40 minutes. Allow 1/2 – 1 hour to cool, you can also place in the freezer to speed up the process for approximately 15 minutes.
