Pumpkin Pie Smoothie

The thought of pumpkin in a smoothie………….hmmmmm, well I tried it and absolutely loved it! Sweet pumpkin pie, it almost tastes like a custard square. I highly recommend trying, go on be adventurous!

Ingredients

1/2 Cup of cold Roasted Pumpkin
1 Banana (peeled and roughly chopped)
1 Cup of Almond Milk
6 drops of Stevia
1 tsp of Chia Seeds
1/2 tsp of Vanilla extract
4 Ice Cubes
1 Tbsp of Coconut Oil (for roasting pumpkin)

Garnish
Sprinkle with a pinch of chia seeds

Combine all ingredients into a blender. Blend until smooth. Pour into glasses. Garnish with Chia seeds, enjoy!

Serves 2, time required 10 minutes.

If roasting pumpkin cut and cube then place into a oven tray. Pour coconut oil into the tray. Bake at 200 degrees for 30-40 minutes. Allow 1/2 – 1 hour to cool, you can also place in the freezer to speed up the process for approximately 15 minutes.
Follow through with the rest of instructions.

  1. Sounds unusual but probably one of them things that tastes better than it sounds! They only really sell pumpkins here in October though, I don’t think I’ve ever seen them at any other time of the year!
